What each ingredient does

Strawberries
Provide the main flavour and juice that sweetens and colours the base.
Sugar
Sweetens the strawberries and draws out their juice, and sweetness also softens the frozen texture.
Heavy cream
Adds richness and fat, giving the ice cream a smooth, creamy body.
Whipped cream
Adds air and lightness, making the frozen texture softer and less dense.

The step that matters

Stir in the whipped cream while the mixture is only partly frozen. If the base is fully frozen, the whipped cream cannot fold in evenly and the ice cream turns out dense and lumpy. Stirring it in while the base is just beginning to set keeps the air in the cream and blends it smoothly.
