Why it works: Celery and carrot match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 10,173 recipes. Both carry myristicin, which smells spice, warm. The science ↓

Beef-steak

Ingredients

Directions

Brown and stew

  1. Brown the beef steaks on both sides in the top fat in a large saucepan, without burning them.

  2. Boil the button onions in enough water to cover them until tender.

  3. Add the browned beef steaks to a double saucepan with the extracted gravy and the water from the boiled onions.

  4. Stir in the chopped celery, carrots, and onions.

  5. Let the steaks stew for 1 to 2 hours until tender.

Chill and reheat the gravy

  1. Transfer the steaks to a basin.

  2. Strain the vegetables out of the gravy, pouring it over the steaks.

  3. Refrigerate the basin overnight to allow the fat to congeal on top.

  4. Remove the congealed fat from the gravy.

  5. Reheat the gravy by placing the basin over a saucepan of boiling water.

Fry the potatoes and serve

  1. Fry the diced potatoes in the top fat until golden yellow, about 15 minutes.

  2. Drain the potatoes on a clean cloth to remove excess fat.

  3. Add the potatoes to the gravy with the steaks when serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef steaks
Provide the main meat, which becomes tender through long slow stewing.
Top fat
Carries the browning of the steaks and fries the potatoes to a golden crust.
Potatoes
Fried until golden, they add a crisp, starchy contrast to the tender meat.
Celery, carrots, and onions
Release sweetness and aroma into the stewing liquid, flavouring the gravy.

The step that matters

Browning the beef steaks. Browning in hot fat builds deep flavour through the Maillard reaction. Burning gives bitter, acrid notes that carry into the gravy, so the steaks need steady heat and close attention.

Swap the celery

How well each one fits the dish's main ingredients (beef, onion, carrot, potato):
