Why it works: Celery and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 6,810 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

And Leek Pie

Ingredients

Directions

  1. Boil the chicken until cooked, then cut it into tidy pieces.

  2. Flavor the chicken jelly with coarse sea salt, celery, onion, and herbs.

  3. Scald the leeks by pouring boiling water over them, then split and cut them into 1-inch pieces.

  4. In a pie dish, layer the chicken pieces, slices of cold boiled tongue, scalded leeks, fine-chopped parsley, and flavored chicken jelly.

  5. Prepare the pie crust as directed for mutton pie.

  6. Fill a baking tin with water and bake the pie.

  7. Once baked, remove the top ornament of the pie, pour in 3 tablespoons of heated fresh cream through the hole, replace the ornament, and serve.
