Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Soak the beans overnight in water to cover. Drain in the morning, cover again with water, and bring slowly to a boil. When the skins begin to loosen, drain.

  2. Select chuck, bottom round, or a similar cut of beef. Brown the meat on all sides and place it in a large roasting pan.

  3. Add the potatoes, peeled and cut into 1½ inch slices, the thoroughly washed prunes, the prepared beans, molasses, sirup, seasoning, and enough water to cover all the vegetables well.

  4. Cover and cook in a moderate oven at 350°F (175°C) for about three hours.
