What each ingredient does

Granulated gelatin
Sets the grapefruit juice mixture into a firm jelly that holds its shape when unmolded.
Pecan meats
Add a crunchy texture and nutty flavor contrast to the soft jelly.
Celery
Adds a crisp, fresh texture to the softer jelly layer.
Grapefruit juice
Provides tart acidity that balances the sugar and gives the jelly its flavor.
Sugar
Sweetens the jelly and balances the tartness of the grapefruit juice.

The step that matters

Let stand until firm before adding the next layer. Gelatin sets as it cools, and it needs to be firm before more liquid jelly is poured over it. Pouring too soon can blend the layers or float the olives and pecans out of place.

Swap the celery

How well each one fits the dish's main ingredients (gelatin, sugar, meat, olive, grapefruit, lettuce):

  1. Tarragonfits about as well
  2. Capersfits about as well
  3. Cinnamonfits about as well
  4. Celerythe original

Fit is the average pairing score against gelatin, sugar, meat, olive, grapefruit, lettuce. Candidates are from the same food group and used in at least 100 recipes.
