What each ingredient does

Flour
Thickens the milk and butter into a white sauce.
Butter
Adds fat and richness to the white sauce.
Milk
Forms the liquid base of the sauce that thickens when heated.
Hard-cooked eggs
Add body and substance, with yolks giving a soft, crumbly topping.
Mushrooms
Add earthy flavor and moisture to the sauce.
Grated cheese
Adds savory flavor and richness to the topping.

The step that matters

Stir in the diced egg whites and finely chopped mushrooms. Flour thickens the sauce only while it is heated and stirred, so the sauce should be smooth and thick before the mix-ins go in. Lumps from unstirred flour will not smooth out later.
