Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Cook the rice

  1. Wash the rice.

  2. Boil the rice in salted water until nearly done.

  3. Boil the rice until the water evaporates.

Make the raisin mixture

  1. Cook the raisins, nuts, and ginger in the butter until the raisins puff up.

  2. Add the raisin mixture and stir thoroughly.

Bake and serve

  1. Pour the mixture into a fire-proof dish, cover, and let it steam in the oven at 350°F (175°C) for 30 minutes.

  2. Serve with fried chicken and gravy, if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Forms the bulk of the dish, absorbing water and butter as it cooks and steams.
Butter
Adds fat and richness, carrying the flavour of the ginger and fruit through the rice.
Raisins
Add sweetness and moisture; they plump up when cooked in butter.
Pecans or walnuts
Add crunch and a toasted, nutty flavour against the soft rice.
Ginger
Adds a warm, aromatic spice note that balances the sweetness of the raisins.

The step that matters

Boil the rice until the water evaporates. Rice cooked too wet turns gluey, while rice dried out before steaming stays hard. Stopping at the right point leaves grains separate and ready to absorb the butter and raisin mixture during steaming.

Swap the raisin

How well each one fits the dish's main ingredients (rice, ginger, walnut, butter):

Fit is the average pairing score against rice, ginger, walnut, butter. Candidates are from the same food group and used in at least 100 recipes.
