Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine crushed crackers, sour pickle, onion, lemon juice, butter, salt, and pepper.

  3. Stuff the mixture inside the fish and place it in a baking dish.

  4. Bake for 1 hour.

  5. For the outside dressing, brown 1 tablespoon of butter with 2 tablespoons of flour in a saucepan.

  6. Gradually add 1 cup of milk, stirring until smooth.

  7. Stir in the egg yolk, additional milk, onion, lemon juice, salt, and pepper.

  8. Beat the egg white until stiff and fold it into the dressing.
