Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the milk into a custard, and whites add lightness when folded in gently.
Cream
Adds richness and a smooth, velvety texture to the soup.
Milk
Forms the liquid base that the eggs thicken into a custard.
Stale bread
Dried-out bread fries crisply and holds its shape in the soup as croutons.

The step that matters

Stir in the beaten egg yolks smoothly. Adding hot milk to eggs too fast or without stirring can scramble the yolks. Stirring steadily while adding them keeps the mixture smooth and lets it thicken evenly as it gently cooks.

Swap the cinnamon

How well each one fits the dish's main ingredients (cream, milk, egg, bread):

  1. Nutmegfits better
  2. Cinnamonthe original
  3. Parsleyfits less well
  4. Celeryfits less well

Fit is the average pairing score against cream, milk, egg, bread. Candidates are from the same food group and used in at least 100 recipes.
