Baked Haddock with One Egg

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix bread crumbs, butter, savory herbs, grated lemon rind, salt, pepper, and egg yolk.

  3. Fill the haddock with the mixture.

  4. Brush the outside of the fish with egg white and sprinkle with additional bread crumbs.

  5. Place the fish in a long pan or curl the tail in its mouth and place in a round pan.

  6. Bake until golden brown.

  7. Serve with anchovy, Béchamel, or caper sauce.
