Baked Whitefish

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Prepare a filling with grated bread crumbs, coarse sea salt, black pepper, melted butter, and chopped parsley if desired.

  2. Sew up the fish and dredge it with flour.

  3. Place the fish in a dripping pan with a piece of butter.

  4. Bake at 400°F (200°C) for about 45 minutes, basting occasionally.

  5. Remove from the oven, cut the threads, and serve.
