Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Pick and clean the young chickens.

  2. Cut down the back, lay open, and flatten with a mallet or hatchet.

  3. Baste the chickens with butter and dredge with flour.

Bake

  1. Place in a dripping pan with a lump of butter and baste once.

  2. Bake in a 400°F (200°C) oven for 20 to 25 minutes without covering the pan.

Make the gravy and serve

  1. Rub a little flour in the pan with the drippings.

  2. Add equal parts boiling water and cream.

  3. Serve hot or cold, great for picnics with cabbage salad.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Young chickens
Provide the meat that is cooked through in the dry oven heat.
Butter
Adds richness and moisture, helping the skin brown as it bastes.
Flour
Dredging coats the chicken and helps thicken the pan liquid into gravy.
Drippings
Carry roasted chicken flavour into the gravy base.
Cream
Adds richness and body to the finished pan gravy.
