Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raw eggs
Thicken the vinegar mixture as they cook and bind the dressing together.
Olive oil
Adds fat and richness, emulsifying into the dressing for a smooth, creamy texture.
Vinegar
Provides acidity that brightens the dressing and balances the richness of the eggs and oil.
Cooked chicken
Forms the main body of the salad, providing protein and substance.
Hard-boiled eggs
Yolks enrich the dressing and whites add texture to the salad.

The step that matters

Stirring the beaten raw eggs into the boiling vinegar. Adding the eggs too quickly, or without stirring, can scramble them into lumps instead of letting them thicken smoothly. Removing the mixture from heat as soon as it thickens prevents it from overcooking and curdling.

Swap the celery

How well each one fits the dish's main ingredients (chicken, vinegar, olive, mustard, butter, pepper, egg):

  1. Tarragonfits better
  2. Capersfits better
  3. Garlicfits better
  4. Celerythe original

Fit is the average pairing score against chicken, vinegar, olive, mustard, butter, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
