Chicken Croquettes

Ingredients

Directions

Prepare the filling

  1. Boil the chicken until cooked, then remove the meat and chop it finely.

  2. In a pan, combine the bread crumbs, butter, and a little water. Cook until it reaches a mushy consistency, then set aside to cool.

  3. Mix the chopped chicken with nutmeg, pepper, salt, onion, parsley, and mace.

  4. Rub the yolks of the hard-boiled eggs and mix them with the chicken mixture and panada until well combined.

Shape and fry

  1. Shape the mixture into pear-like forms.

  2. Roll each croquette in beaten eggs, then coat with bread crumbs.

  3. Fry in hot lard until golden brown, similar to frying doughnuts.

What each ingredient does

Chicken
Provides the main body and protein of the filling that holds the croquette together.
Bread crumbs
Form the panada with butter and water, binding the filling and thickening it into a mushy paste.
Butter
Adds richness and fat, softening the panada and giving the filling a tender texture.
Hard-boiled eggs
Their yolks bind the chicken mixture, adding richness and a smooth, cohesive texture.
Beaten eggs
Act as a coating that helps fresh bread crumbs adhere and brown during frying.

The step that matters

Cooling the panada before mixing. If the bread crumb panada is still warm, it can make the filling loose and sticky, so the croquettes may not hold their shape when rolled and fried.

Swap the mace

How well each one fits the dish's main ingredients (chicken, bread, butter, nutmeg, pepper, onion, parsley):

  1. Thymefits better
  2. Marjoramfits better
  3. Garlicfits better
  4. Macethe original

Fit is the average pairing score against chicken, bread, butter, nutmeg, pepper, onion, parsley. Candidates are from the same food group and used in at least 100 recipes.
