Corn Bread

Why it works: Milk and butter are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 81,283 recipes. Both carry (z)-4-heptenal, which smells biscuit, cream. The science ↓

Corn Bread

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the batter

  1. In a large bowl, combine sweet milk, sifted cornmeal, cream of tartar dissolved in cold water, salt, and melted butter.

  2. Beat the eggs well and add them to the mixture.

  3. Dissolve the baking soda in hot water and add it last to the batter.

  4. Mix until well combined and pour into a greased baking dish.

Bake

  1. Bake for 30-40 minutes or until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Beaten eggs add structure and help bind the batter as they set in the oven.
Baking soda
Reacts with the acidic cream of tartar to release gas, helping the cornbread rise.
Cream of tartar
Provides acidity that reacts with the baking soda to lift the batter and add tang.
Cornmeal
Forms the main body of the bread, giving it its grainy texture and structure.
Melted butter
Adds fat for tenderness and flavor, and helps browning in the oven.

The step that matters

Adding the baking soda last. Baking soda starts reacting as soon as it meets the acid in the batter, releasing gas. Adding it last and mixing promptly keeps that gas in the batter so it lifts in the oven rather than escaping before baking.
