Orange Pudding

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Peel and slice the oranges, removing the seeds and cutting the slices into small pieces.

  2. Sprinkle sugar over the orange pieces in a serving dish.

  3. Prepare a boiled custard, making it slightly thicker than usual, and pour it hot over the fruit.

  4. Beat the egg whites until stiff, then mix in sugar to create a meringue.

  5. Spread the meringue over the custard and fruit, then bake in a 400°F (200°C) oven for a few minutes.

  6. Serve cold.
