Angels' Food

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Sift the flour four times, add the cream of tartar, and sift again.

  2. Sift the powdered sugar and measure it.

Make the batter

  1. Beat the egg whites until stiff on a large platter.

  2. Gradually add the sugar, then the flour, and finally the vanilla while continuing to beat.

  3. Continue beating until the mixture is in the pans.

Bake and cool

  1. Bake for 40 minutes at 350°F (175°C).

  2. Check with a straw; if too soft, leave in the oven a few minutes longer.

  3. Turn the pan upside down to cool.

  4. Once cool, loosen the cake from the sides with a knife.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into a stiff foam that gives the cake its light, airy structure.
Powdered sugar
Sweetens the cake and dissolves into the foam, helping keep it fine-textured and tender.
Flour
Provides the starch that sets during baking and gives the cake its firm crumb.
Cream of tartar
Stabilizes the whipped egg whites, helping the foam hold its volume.

The step that matters

Beat the egg whites until stiff. Air whipped into the egg white foam is what makes the cake rise, so the whites must be beaten to stiff peaks. Under-beaten whites will not hold their volume, and over-folding after the flour and sugar are added will knock out air and produce a dense cake.

Swap the vanilla

How well each one fits the dish's main ingredients (egg, sugar, flour, cream):

  1. Raisinfits about as well
  2. Vanillathe original
  3. Figfits less well
  4. Strawberryfits less well

Fit is the average pairing score against egg, sugar, flour, cream. Candidates are from the same food group and used in at least 100 recipes.
