Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rich cream
Provides the fat and body that give the dessert its light, creamy structure when whipped.
Egg whites
Whipped to stiff foam, they add airiness and lift to the cream mixture.
Gelatine
Sets the mixture so it holds its shape when chilled.
Powdered sugar
Sweetens the cream and dissolves easily into it.

The step that matters

Folding the stiff egg whites into the cream mixture. Stiff egg white foam traps air that gives the dessert its lightness. Folding gently keeps that air in, while vigorous stirring would deflate the foam and make the dessert dense.
