Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the milk and cream mixture so the filling holds its shape when cool.
Egg whites
Whipped to a stiff froth, they lighten the filling and give it airy structure.
Cream
Whipped into the filling, it adds richness and a light, creamy texture.
Powdered sugar
Sweetens the whipped egg whites and dissolves easily into the foam.

The step that matters

Adding the gelatin mixture to the egg whites. Gelatin begins to set as it cools, so if it is added too cold or too quickly it can form lumps or strings. Adding it slowly while stirring keeps the filling smooth and airy.
