Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. Fill a small deep dish half full with stewed apples or preserved acid fruit.

Make the meringue

  1. In a bowl, beat the egg whites until stiff peaks form.

  2. Gradually add the sugar while continuing to beat until glossy.

Bake and serve

  1. Pour the meringue over the apples.

  2. Bake in the oven until the meringue is cooked and lightly browned.

  3. Serve warm or cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into foam that gives the meringue its light, airy structure.
White sugar
Stabilizes the whipped egg white foam and makes the meringue glossy and sweet.
Stewed apples or preserved acid fruit
Provides moist, tart fruit beneath the meringue that balances its sweetness.

The step that matters

Beating the egg whites to stiff peaks. Egg whites must be whipped until stiff enough to hold air. Adding sugar gradually keeps the foam stable, so the meringue stays light and glossy rather than collapsing or weeping during baking.

Swap the apple

How well each one fits the dish's main ingredients (egg, sugar):
