Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green tomatoes
Provide the bulk of the pickle and absorb the spiced vinegar as they cook.
Onions
Add savory flavor and body, softening as they stew in the vinegar.
Sugar
Balances the sharpness of the vinegar and adds sweetness to the pickle.
Vinegar
Provides the acidity that preserves the pickle and sharpens its flavor.
Mustard seed
Adds a sharp, pungent bite and a gentle texture to the pickle.
Turmeric
Gives the pickle its bright yellow color and an earthy flavor.

The step that matters

Stew until the tomatoes turn bright yellow. Stewing must be gentle and stirred often so the spices bond with the vinegar and the tomatoes cook through without scorching on the bottom of the kettle.
