Strawberry Vinegar

Ingredients

Directions

Infuse the vinegar

  1. Place the strawberries in a large container and cover with vinegar. Let them sit for 3 to 4 days.

  2. Drain the vinegar through a jelly bag and pour it back over the same quantity of strawberries.

  3. Strain the mixture again.

Sweeten and bottle

  1. For every pound of liquid, add 1 pound of sugar and mix well.

  2. Bottle the mixture and let it sit covered (but not corked) for one week.

  3. After a week, cork the bottles tightly and store in a dry, cool place.

What each ingredient does

Strawberries
Release their flavour and colour into the vinegar during the multi-day soak.
Vinegar
Extracts and preserves the strawberry flavour, providing the sharp acidic backbone of the drink.
Sugar
Balances the vinegar's sharpness and adds sweetness, rounding out the fruit flavour.
