Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Granulated sugar
Provides the sweet bulk and, as it cooks, the structure that sets the taffy.
Vinegar
Acidity helps prevent sugar from crystallizing, keeping the taffy smooth and chewy.
Butter
Adds fat that softens the texture and gives a tender, pliable chew.

The step that matters

Cook until thick, testing in cold water. Sugar syrup must reach the right concentration before cooling. Undercooked taffy stays sticky and soft, while overcooked taffy becomes hard and brittle. Testing a drop in cold water shows when it has reached the firm-but-pliable stage.

Swap the nuts

The recipe marks nuts as optional. How well each one fits the dish's main ingredients (sugar, vinegar, butter, vanilla):

  1. Almondfits better
  2. Chestnutfits better
  3. Hazelnutfits better
  4. Nutsthe original

Fit is the average pairing score against sugar, vinegar, butter, vanilla. Candidates are from the same food group and used in at least 100 recipes.
