Cream Candy

Ingredients

Directions

The book gives no oven temperature. The 300°F in the steps was added when the recipe was transcribed, as a starting point.

  1. Combine sugar, water, vinegar, cream, butter, vanilla, and baking soda in a large pot.

  2. Bring the mixture to a boil and cook until it reaches the hard crack stage (300°F or 149°C) when tested in cold water.

  3. Once ready, remove from heat and let it cool slightly before working it until very white.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Forms the bulk of the candy and sets into a firm, brittle structure as it cooks.
Cream
Adds richness and fat, giving the candy a softer, creamier texture.
Butter
Adds fat for smoothness and a rich flavor in the finished candy.
Vinegar
Adds acidity that helps prevent sugar from crystallizing too coarsely.

The step that matters

Cooking to the hard crack stage. Stopping at the right temperature, 300°F or 149°C, controls how much water remains in the sugar. Too little cooking leaves the candy soft and sticky, while overcooking makes it hard and brittle.

Swap the vanilla

How well each one fits the dish's main ingredients (sugar, vinegar, cream, egg, butter):

  1. Vanillathe original
  2. Strawberryfits about as well
  3. Raspberryfits less well
  4. Apricotfits less well

Fit is the average pairing score against sugar, vinegar, cream, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
