Ingredients

Directions

Make the filling

  1. Sift the hard-boiled eggs through a fine wire sieve.

  2. Add the grated nutmeato and rub smooth with the back of a spoon.

  3. Season with salt and celery salt to taste.

  4. If the mixture is too dry, moisten with a small quantity of nut milk.

Assemble the sandwiches

  1. Cut the brown bread into thin slices.

  2. Use a cookie cutter to cut the slices into round pieces, excluding the crust.

  3. Spread the mixture on half of the round pieces and top with the remaining pieces to complete the sandwiches.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hard-boiled eggs
Provide the main body and creamy texture of the filling once sieved and smoothed.
Nutmeato
Supplies the bulk of the filling, giving it a grated, spreadable texture.
Nut milk
Adds moisture to loosen the filling when the mixture turns too dry.

The step that matters

Sieving the hard-boiled eggs. Pushing the eggs through a fine sieve breaks up the yolk and white into fine particles, so the filling spreads smoothly instead of crumbling. Rubbing with the back of a spoon finishes the texture.

Swap the celery

How well each one fits the dish's main ingredients (egg, milk, bread):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Parsleyfits better
  4. Celerythe original

Fit is the average pairing score against egg, milk, bread. Candidates are from the same food group and used in at least 100 recipes.
