Apple Cutlets

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Pare and slice the apples crosswise into ¼ inch thick slices.

  3. Dip each slice into peanut cream.

  4. Roll the slices in finely ground zwieback.

  5. Place on oiled baking sheets.

Bake and serve

  1. Bake until nicely browned.

  2. For a fried appearance, brush the tops with peanut cream when they begin to brown.

  3. Sprinkle with pulverized sugar before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tart apples
Provide the main body and a tart flavour that balances the sweet coating.
Peanut cream
Acts as a sticky binder that holds the zwieback coating and adds richness and browning.
Finely ground zwieback
Forms a crisp, browned crumb coating around the apple slices.
Pulverized sugar
Adds sweetness to the finished cutlets as a final dusting.

The step that matters

Brush the tops with peanut cream as they begin to brown. Browning depends on sugars and proteins reacting at surface heat, so timing matters. Brushing too early can soak the crumb, and too late leaves the tops pale and dry.

Swap the peanut

How well each one fits the dish's main ingredients (apple, cream, sugar):

  1. Chestnutfits better
  2. Hazelnutfits better
  3. Almondfits better
  4. Peanutthe original

Fit is the average pairing score against apple, cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
