Baked Beans

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the beans

  1. Look over, wash, and soak the beans overnight.

  2. In the morning, cook the beans in soft water until tender but not mushy.

Bake

  1. Season with coarse sea salt and pour nut cream over the beans until nearly covered.

  2. Bake in a 350°F (175°C) oven for three to four hours, stirring occasionally.

  3. When done, the beans should be a rich brown color throughout.

  4. Add a little sugar or molasses if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White beans
Provide the main body and starchy structure that becomes tender during cooking and baking.
Nut cream
Adds moisture and richness so the beans bake slowly without drying out.

The step that matters

Baking until deep brown throughout. The beans need enough time and gentle heat for the sugars and proteins to brown slowly, and stirring keeps the surface from drying or scorching unevenly. Stopping too early leaves them pale and under-flavored.

Swap the beans

How well each one fits the dish's main ingredients (cream, butter, sugar):

  1. Almondfits better
  2. Filbertfits better
  3. Pistachiofits better
  4. Beansthe original

Fit is the average pairing score against cream, butter, sugar. Candidates are from the same food group and used in at least 100 recipes.
