Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Cook the beets until tender, then cut them into dice.

  2. Layer the diced beets in a pudding dish and sprinkle with bread crumbs.

  3. Add another layer of beets and cover with more bread crumbs.

  4. Pour enough salted strained tomatoes over the layers to moisten well.

  5. Bake in a 400°F (200°C) oven until brown on top.
