Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the pumpkin

  1. Pare and cut the pumpkin into small pieces.

  2. Cook the pumpkin slowly in ½ cup water for 6 hours.

  3. After 4 hours, add 1 cup molasses to the pumpkin.

  4. Once cooked, strain the mixture through a sieve.

Make the filling

  1. Combine 2 cups of the strained pumpkin with 1 pint water, 1 cup sugar, 1 teaspoon salt, and 2 eggs.

Bake

  1. Bake in a preheated oven at 350°F (175°C) for 45 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pumpkin
Forms the body of the pie and supplies moisture and bulk to the filling.
Eggs
Set as they heat, giving the filling structure so it firms into a sliceable custard.
Sugar
Adds sweetness and helps balance the earthy flavour of the pumpkin.

The step that matters

Bake until the filling sets. The eggs thicken the filling as their proteins coagulate in the oven. Underbaking leaves the custard loose and runny, while overbaking can make it cracked and grainy.

Swap the pumpkin

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Pumpkinthe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
