Almond Filling
Ingredients
Directions
Prepare the almonds
Blanch the almonds by placing them in boiling water for 2-3 minutes.
Drain the water and rub off the skins.
Place the almonds in a warm oven to dry completely.
Reserve ½ cup of the almonds and grind the rest into a paste using a mortar.
Make the filling
Beat the egg whites until crumbly and stiff.
Add the rose water and powdered sugar to the egg whites and fold in the almond paste.
Assemble and decorate
Spread the mixture in a thin layer on top of each cake layer.
Slice the reserved almonds finely and sprinkle them on top.
Optionally, add a sprinkling of red sugar sand for decoration.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Almonds
- Provide the main body and nutty flavour of the filling once ground into a paste.
- Egg whites
- Whipped to a stiff foam that gives the filling its light, airy structure.
- Powdered sugar
- Sweetens the filling and dissolves easily into the whipped egg whites.
The step that matters
Beating the egg whites until stiff. Egg whites must be beaten to a stable foam before folding; under-beaten whites stay runny and deflate, while over-beaten whites turn dry and grainy, so the filling loses its airy texture.
