Why it works: Oats and peanut work together. They rank in the top 7% of all ingredient pairs, and cooks put them together in 368 recipes. Both carry trans,trans-2,4-nonadienal, which smells fatty, green. The science ↓
Malted Nut Zwieola
Ingredients
Directions
The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.
Prepare the dough
Combine the white flour, rolled oats, cornmeal, and peanut meal in a large bowl.
Add enough water to form a very stiff dough.
Shape the dough and bake it until done.
Grind and dry
Once baked, grind the mixture to a coarse meal.
Dilute the malt in hot water and mix it with about 1 quart of the ground zwieola.
Spread the mixture out and dry it in a slow oven at 300°F (150°C).
When dry, grind the mixture again.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

What each ingredient does
- White flour
- Forms the bulk of the dough and gives the baked zwieola its structure.
- Rolled oats
- Add body and a hearty, chewy texture to the baked mass.
- Peanut meal
- Adds protein and a rich, nutty flavour to the dough.
- Malt
- Adds sweetness and a malty aroma from its natural sugars.
The step that matters
Drying the mixture in the slow oven. Drying must be complete before the second grinding. Residual moisture can leave the meal damp, encouraging mould and spoilage during storage, and makes it harder to grind into a uniform meal.
Swap the peanut
How well each one fits the dish's main ingredients (flour, oats, malt):
- Almondfits better
- Beansfits better
- Sesamefits about as well
- Peanutthe original
Fit is the average pairing score against flour, oats, malt. Candidates are from the same food group and used in at least 100 recipes.
