Cream Nuts

Ingredients

Directions

The book gives no oven temperature. The 300°F in the steps was added when the recipe was transcribed, as a starting point.

Make the dough

  1. Beat the egg white until frothy, then add the vanilla extract and beat again.

  2. Pour in the coconut cream and mix in part of the powdered sugar.

  3. Knead in enough sugar to make the mixture moldable without becoming crumbly.

Shape and bake

  1. Roll the mixture into balls using your hands.

  2. Press a half walnut or pecan kernel into the top of each ball.

  3. Place the balls in well-oiled tins.

  4. Bake in a very slow oven (300°F / 150°C) with the door slightly open until the egg is cooked but the sugar does not melt.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg white
Beaten until frothy, it adds air and helps bind the dough.
Powdered sugar
Provides sweetness and bulk, and is kneaded in to give a moldable texture.
Coconut cream
Adds moisture and richness to the mixture.

The step that matters

Baking at a very low temperature with the door slightly open. Sugar melts and browns at higher heat, so a very slow oven with the door ajar dries and cooks the egg while keeping the sugar from melting and spreading.

Swap the walnut

How well each one fits the dish's main ingredients (egg, coconut, cream, vanilla, sugar):

  1. Almondfits better
  2. Macadamia nutfits better
  3. Brazil nutfits better
  4. Walnutthe original

Fit is the average pairing score against egg, coconut, cream, vanilla, sugar. Candidates are from the same food group and used in at least 100 recipes.
