What each ingredient does

Chicken
Provides the main body and rich flavor as its meat and bones release into the broth.
Flour
Browns during frying and helps thicken the broth slightly.
Oysters
Add their briny, savory flavor; they cook quickly and turn firm when overcooked.
File powder
Thickens the gumbo and adds a distinctive earthy flavor when stirred in at the end.
Tomato ketchup
Adds sweetness and acidity that rounds out the broth.

The step that matters

Boil the oysters for only 5 minutes. Oysters toughen and shrink when boiled too long. A short cook keeps them plump and tender while their flavor still reaches the broth.

Swap the onion

How well each one fits the dish's main ingredients (chicken, flour, oyster, pepper, tomato, ketchup):

  1. Capsicumfits better
  2. Okrafits better
