Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Turbot a LA Creme

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the fish and sauce

  1. Boil the fish in salted water until cooked through.

  2. Remove all bones and skin, then flake the fish.

  3. In a pot, boil the cream, stirring in the flour until smooth.

  4. Add parsley and onion to the cream for flavor.

  5. Remove the parsley and onion after boiling.

  6. Clarify the butter.

  7. Mix the clarified butter into the cream along with cayenne pepper.

Assemble and bake

  1. Butter a baking dish.

  2. Layer the flaked fish and cream sauce alternately until the dish is full, finishing with sauce on top.

  3. Sprinkle a thick layer of bread crumbs over the top.

  4. Bake at 350°F (175°C) for 30 minutes.

Garnish and serve

  1. Garnish with chopped hard-boiled eggs and parsley before serving.

What each ingredient does

Turbot
Provides the flaked fish that forms the body of the dish.
Cream
Forms the rich sauce that moistens the fish and carries the flavor.
Flour
Thickens the cream into a smooth sauce that holds the layers together.
Butter
Adds richness and fat to the sauce, clarified so it blends smoothly.
Bread crumbs
Forms a crisp, browned topping over the baked fish and sauce.

The step that matters

Thickening the cream with flour. Flour must be stirred in while the cream boils so it dissolves without lumps; adding it to cold cream or skipping the stirring leaves a grainy sauce that will not bind the layers.

Swap the onion

How well each one fits the dish's main ingredients (turbot, cream, flour, parsley, butter, pepper, bread):

  1. Shallotfits better
  2. Leekfits better
  3. Chivefits better
