What each ingredient does

Herrings
Form the main body of the salad as the fish component.
Boiled potatoes
Add starchy bulk that soaks up the dressing and gives the salad body.
Apples
Contribute crisp texture and mild sweetness to balance the sharp elements.
Hard-boiled eggs
Add richness and a soft, creamy texture to the mixture.
Salt anchovies
Add concentrated salty, savory flavour that seasons the whole salad.
Olive oil
Adds fat and moisture, carrying flavour through the salad.

The step that matters

Soaking the herrings. Soaking for the full hour draws out excess salt from the cured fish, so the salad is not overly salty. Skinning and boning afterward removes the fragile bones and skin that would spoil the texture.

Swap the apple

How well each one fits the dish's main ingredients (potato, onion, egg, veal, capers, olive, pepper):

  1. Lemonfits better
  2. Avocadofits better
  3. Limefits better
  4. Applethe original

Fit is the average pairing score against potato, onion, egg, veal, capers, olive, pepper. Candidates are from the same food group and used in at least 100 recipes.
