Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pearl barley
Gives the drink its body and mild, grain-like flavour as it steeps in the water.
Sugar
Absorbs the lemon oil from the peel and adds sweetness to the drink.
Lemon
Supplies acidity and fragrant citrus flavour from its juice and peel.

The step that matters

Rub the sugar on the lemon. Rubbing the lemon with sugar lifts the fragrant oils from the peel into the sugar, so they flavour the drink rather than staying on the rind. Peeling with minimal white pulp keeps the bitter pith out of the jug.

Swap the lemon
