Cottage Cheese

Ingredients

Directions

The book gives no oven temperature. The 100°F (38°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Heat the milk to 100°F (38°C) while stirring continuously to prevent hot spots.

  2. Pour the heated milk into a strainer lined with thin muslin and hang to drain.

  3. Once the whey has drained, season the cheese with coarse sea salt and white pepper if desired.

  4. Stir in enough sweet cream to moisten, or use sour cream or butter to flavor.

  5. Serve cold.
