Desserts. Gelatine Dishes
Ingredients
Directions
Use the minimum amount of gelatine needed to hold its shape when molded.
Wet a mold in cold water before adding gelatine.
Cool a small amount of gelatine in the mold, then arrange fruit for presentation.
Chill the serving dish well before placing the gelatine in it.
If gelatine sticks, apply a cloth soaked in warm water to the mold for a few minutes.
Dissolve gelatine by pouring hot water over it after soaking or by placing the dish in hot water and stirring.
Use phosphated gelatines with fruit and unphosphated with milk desserts.
