Clam Chowder

Ingredients

Directions

Prepare

  1. Chop and thoroughly cook 1 quart of clams, removing the muscles and stomach parts.

  2. Fry ½ pound of chopped salt pork in a pot until it renders 2 tablespoons of fat.

Make the chowder

  1. Add the chopped onion, carrot, and potato to the pot and cover with hot water.

  2. Boil for about 5 minutes, then add the hard parts of the clams and boil for 15 to 20 minutes until tender.

  3. Stir in 1 cup of clam water and the soft parts of the clams, boiling for an additional 10 minutes.

  4. Finally, add 1 quart of milk and heat until hot, but do not let it curdle.

What each ingredient does

Clams
Provide the main seafood flavor and texture of the chowder.
Salt pork
Renders fat that carries flavor through the pot before the liquids go in.
Potato
Adds starch and body, thickening the chowder as it cooks.
Milk
Makes the base creamy and mellows the briny clam flavor.
Cracker dust
Thickens the chowder slightly by absorbing liquid.

The step that matters

Adding the milk. Milk can curdle if it boils. Heating it only until hot, without boiling, keeps the chowder smooth and creamy.
