Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Beat together the powdered sugar, butter, and salt until well combined.

  2. Beat the yolks of the eggs and add them to the mixture, then beat well.

  3. In a separate bowl, beat the egg whites until stiff peaks form.

  4. Stir the flour into the mixture, then gently fold in the beaten egg whites.

Bake

  1. Pour the batter into a greased loaf pan and bake in a slow oven at 300°F (150°C) until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich and bind the batter, while whipped whites add lift and a light crumb.
Butter
Fat that creams with the sugar and gives the cake its tender texture and rich flavor.
Flour
Provides the structure that sets as the cake bakes and holds its shape.
Powdered sugar
Sweetens the batter and helps create a fine, even crumb when creamed with butter.

The step that matters

Folding in the beaten egg whites. Whites hold air only while stiff. Stirring them in vigorously knocks the air out, while gentle folding keeps the batter light so the cake rises evenly.
