Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells during overnight soaking and thickens the pudding as it cooks.
Eggs
Egg yolks enrich and set the custard, while whipped whites add lift and a light texture.
Milk
Provides the liquid that the tapioca absorbs and the eggs set into a creamy base.
Melted butter
Adds fat for richness and a smooth, tender texture.
Sugar
Sweetens the pudding and adds to its browning in the oven.

The step that matters

Folding in the beaten egg whites. Whites hold air only when whipped; folding gently keeps that air in the batter so the pudding rises and stays light instead of deflating.
