Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the main body, pulp and flavour of the ketchup.
Vinegar
Adds acidity that gives the ketchup its tangy taste and helps preserve it.
Salt
Seasons the sauce and helps draw out moisture and preserve it.
Ground mustard seeds
Add a sharp, pungent note that rounds out the tomato sweetness.

The step that matters

Simmering the mixture. Simmering over low heat for about 30 minutes lets water evaporate so the sauce thickens and the spices blend. Heating too hard can scorch the tomato solids on the bottom of the pot, so stirring matters.

Swap the tomato

How well each one fits the dish's main ingredients (vinegar, pepper, mustard, clove, allspice):

  1. Horseradishfits better
  2. Shallotfits better
  3. Radishfits better
  4. Tomatothe original

Fit is the average pairing score against vinegar, pepper, mustard, clove, allspice. Candidates are from the same food group and used in at least 100 recipes.
