What each ingredient does

Fat (chicken, turkey, or goose)
Forms the cooking medium and carries the flavour, becoming the clarified fat that is kept.
Bread
Absorbs leftover water and helps trap small solids as the fat is clarified.

The step that matters

Boil gently for about 30 minutes. Water in the fat must evaporate and the solids must sink. If the heat is too high, the fat can scorch and the remaining solids brown, giving a darker, bitter flavour.
