Cold Corned Beef

Ingredients

Directions

  1. Clean and blanch the tongue for about 10 minutes until the skin can be easily removed.

  2. Boil the tongue in a soup kettle with the beef to make broth until done.

  3. Cut square fillets of bacon, dredge in a mixture of chopped parsley, chives, salt, pepper, and a little allspice, and lard the tongue with the fillets.

  4. In a crockery stewpan, combine diced bacon, parsley, thyme, basil, bay leaves, garlic, cloves, carrots, onions, salt, and pepper.

  5. Lay the tongue on top, wet with white wine and broth, cover, and simmer on moderate heat for about 5 hours.

  6. Once cooked, place the tongue on a dish, strain the sauce over it, and serve.
