What each ingredient does

Smoked beef tongue
Is the main protein, becoming tender through long, slow simmering in water.
Onions
Add sweetness and aroma to the cooking liquid, flavouring the tongue as it simmers.
Garlic
Adds aroma to the simmering liquid, mellowing during the long cook.

The step that matters

Simmering for about 6 hours. The tongue must simmer gently rather than boil hard, because vigorous boiling toughens the meat and can break it apart. Keeping the water level topped up keeps the tongue submerged so it cooks evenly.
