What each ingredient does

Veal breast
Provides the main meat, which becomes tender during long, gentle simmering.
Bacon
Adds fat and savory flavor to the pan before the other ingredients are browned.
Butter
Adds fat and richness, and helps the veal brown evenly.
Onions
Soften and sweeten as they cook, building a flavorful base for the stew.
Carrots
Add natural sweetness and body to the simmering liquid.

The step that matters

Browning the veal breast. Turning the veal until golden on both sides builds browned flavor through the Maillard reaction. Pale meat added to the pot gives a flatter, less savory stew.
