Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Release moisture and savory flavour as they brown in the butter.
Butter
Carries fat for frying and adds richness to the sauce.
Flour
Thickens the cooking liquid into a light sauce once it is stirred in.
White wine
Adds acidity and aroma, and reduces to concentrate flavour in the sauce.
Hard-boiled eggs
Provide body and protein-rich texture to the finished dish.

The step that matters

Reducing the broth and wine by half. Boiling gently concentrates flavour and thickens the liquid. If it is under-reduced the sauce will be thin and bland, and if boiled hard it can scorch or turn bitter.

Swap the clove
