What each ingredient does

Flour
Thickens the milk and butter into a stiff base that holds the croquettes together.
Butter
Adds richness and fat to the sauce, softening its flavor and texture.
Milk
Forms the liquid base of the white sauce that binds the fish.
Cooked fish
Provides the main flavor and bulk of the croquette filling.
Egg
Binds the outer coating so the breadcrumbs adhere during frying.
Breadcrumbs
Form a crisp, browned outer crust when fried.

The step that matters

Cool the mixture fully before shaping. A warm, loose mixture cannot hold its shape. Cooling lets the starch in the thickened sauce set so the croquettes keep their form through coating and frying.

Swap the parsley

How well each one fits the dish's main ingredients (flour, butter, milk, pepper, fish, egg, lemon):

  1. Parsleythe original
  2. Nutmegfits about as well
  3. Tarragonfits less well
  4. Cardamomfits less well

Fit is the average pairing score against flour, butter, milk, pepper, fish, egg, lemon. Candidates are from the same food group and used in at least 100 recipes.
