Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Salmon Chops

Ingredients

Directions

  1. Squeeze the juice of ½ lemon into a bowl.

  2. Add 1 teaspoon salt, a dash of red pepper, a little parsley, and 2 tablespoons dried bread crumbs.

  3. In a saucepan, make a thick cream sauce by heating 1 cup cream, 1 walnut-sized piece of butter, and 1 tablespoon flour until thickened.

  4. Combine the cream sauce with the salmon mixture and let it cool.

  5. Mould the mixture into chop shapes.

  6. Dip each chop into additional bread crumbs, then into 1 beaten egg, and back into the bread crumbs.

  7. Fry the chops in hot lard until golden brown.
