Ingredients

Directions

Prepare

  1. Make the pastry paste and set aside in a cool place.

  2. Cut the chicken into pieces as for a fricassee.

  3. Peel and dice the potatoes, and cut the ham into the same size.

  4. Roll out half of the paste into a thin sheet.

  5. Butter the sides and bottom of a round pot.

Assemble

  1. Line the sides of the pot with the pastry and cut trimmings into squares.

  2. Layer chicken, potatoes, ham, salt, and pepper in the pot, then add squares of pastry.

  3. Repeat layering with the remaining chicken, potatoes, and ham.

  4. Roll out the remaining paste, cut a hole in the center, and place it on top of the last layer.

  5. Pour about one quart of boiling water through the hole.

Cook

  1. Place the pot over low heat and simmer for 1½ hours.

  2. Half an hour before it is done, add one tablespoon of butter through the hole in the top crust.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main meat and savory flavor of the filling as it simmers.
Potatoes
Break down slightly during simmering, thickening the broth and giving body to the filling.
Flour
Forms the pastry paste whose sheets line the pot and cover the filling.
Ham
Adds salty, savory flavor that seasons the chicken and potatoes during cooking.
Butter
Adds richness and fat to the filling and pastry, improving flavor and mouthfeel.

The step that matters

Simmer over low heat. Gentle heat cooks the chicken and potatoes through while keeping the broth from boiling hard, which could toughen the meat and break up the potatoes.

Swap the potato

How well each one fits the dish's main ingredients (chicken, ham, pepper, butter, flour):

  1. Capsicumfits about as well
